Millet Khichdi : Michdi - Recipe -

Embark on a culinary adventure with this Millet Khichdi Recipe aka Michdi recipe, a comforting and nutritious twist on the classic Indian dish. Method :-  

  1. In a pressure cooker, begin by heating 1 tablespoon of ghee over medium heat. 
  2. Add cumin seeds (jeera) and allow them to fry until they start to splutter, releasing their aromatic essence.
  3.  Proceed to sauté finely chopped onions, ginger, and green chili, stirring until the onions become translucent and the mixture is fragrant. 
  4. Following this, introduce diced tomatoes to the mix, allowing them to soften before adding peas and an assortment of your chosen vegetables. Continue to sauté the mixture for a few minutes, ensuring the vegetables are well-coated and begin to release their flavors.
  5. Next, incorporate the khichdi mix into the cooker, stirring it with the vegetable medley to ensure even distribution of flavors. 
  6. Season the mixture with salt and pepper to taste. 
  7. Gradually pour 3 to 4 cups of warm water into the cooker, adjusting the quantity to achieve the desired consistency of the khichdi. 
  8. Secure the lid of the pressure cooker, set the heat to high, and allow the khichdi to cook for 2-3 whistles, depending on the cooker's intensity and the grains' cooking time.
  9. Once cooked, carefully release the pressure from the cooker and open the lid. Gently mix the khichdi to ensure the ingredients are evenly distributed throughout the dish.

Ingredients:-

  • 1cup Grainova’s Michdi (washed, soaked & sieved)
  • 1 chopped onion
  • 1 or 2 tomatoes chopped as per size
  • 1 green chilli chopped
  • Little ginger
  • ¼ cup green peas or any other veggie
  • ½ tsp turmeric
  • 1tsp cumin seeds, pinch of hing
  • Seasoning & black pepper as per taste
